Wine Tasting Notes:
A sweet and sumptuous dessert wine with stonefruit and lychee aromas, finished by complex nutty flavours, derived from extended barrel maturation. In waiting for the brix levels to rise, 40% of the crop was lost due to shrivel and bird peck, hence only two barriques were produced.
The noble harvest is only made in years where we have complete perfect raisoning of the grapes on the vine due to botrytis (noble rot). To achieve the raisoning we need moisture from overnight dew and fog to spread the botrytis and warm windy days for the grapes to dry out. The Chardonnay grapes for this wine were hand harvested late in the season after botrytis raisoning, along with a small amount of extremely raisined Gewurztraminer. Fermented in oak barrels, the finished wine displays stonefruits and lychees, finishing with spicy flavours.
