Whole bunch pressed Chardonnay fermented in 680L ceramic eggs for two weeks until there is the perfect amount of sugar to finish in bottle with a good level of spritz. The in is aged on lees in bottle for six months and then disgorged. An austere fresh lemon sherbet nose with persistent bead. But biting into the wine gives an explosion of Granny Smith apples with a rich textured pallet and crisp tartness. 11.5% alc/vol. – Winery Note
