In classic Gamay style, this wine purple and brilliant red wine expresses a tropical nose of bright fruits like cherry, strawberry jam and gooseberry, with a mid-weight palate. Peppery undertones support the fruit flavours of cherries and strawberries, with hints of dark fruits in the middle. We've had great success pairing this wine with fish and light meats.
The Gamay is made following a process with a 5 days cold maceration before the fermentation. This allows the solid parts of the grapes (pulps, pits, skin) to release their primary aromas. Then follows an alcoholic fermentation at 28?øC for a period of 28 days in order to extract the color. The reds are fermented with their own yeasts.
As soon as the alcoholic fermentation is over, the malolactic fermentation is started immediately, to keep the best of the aromas. Finally, an 8 months fermentation in stainless steel tanks is carried out with a good control of the oxygen levels.
