The harvest is pressed directly, the juice and the first "pressing" are
isolated and immediately put at low temperature of 5-7 ?øC for clearing.
The alcoholic fermentation is done at low temperature: 16 ?ø C over about ten days
As soon as the alcoholic fermentation is finished, the pressings and the juice are reassembled and then matured for another 1 to 2 months.
