About the Winery
100 years ago, the estate was home to a sheepfold. It was only in the 70s that the property, which became a hunting rendezvous, delivered to Mr. Paul-Cavalier his treasures of terroirs unsuspected for the cultivation of the vine. With patience and hard work, Mr. Paul-Cavalier was able to create the 38 ha of vines preserving the magic of the place. In this wild setting, it is natural that the Vallongue estate was converted to organic farming in 1985.
