In its youth this wine had a dark deep burgundy colour with purple hues. The nose
delivers a wonderful complex array of berry fruit aromas that are complimented by subtle
French oak. The palate delivers dark cherry, raspberry, vanilla and hints of spice and
smoke. This wine is elegant yet surprisingly powerful with a generous mid-palate, soft
tannins and a wonderful finish.

While our winemaking approach is straight forward we do make small adjustment
dependent upon the season. This season called for a slightly more extractive approach
with more hand plunging and a longer time on skins. The grapes were picked in the cool
of the morning before being de-stemmed into open top fermenters. We uses the
traditional Burgundian techniques of small batch fermentation and hand-plunging. After
pressing the resulting wines are matured in 225lt French oak barriques (25% new). The
individual batches (clones and vineyard) are kept separate through the nine months in
barrel before the best barrels are chosen for this blend.
