OAKRIDGE OTS CHARDONNAY 2015

Handpicked grapes chilled then whole bunch pressed with half going directly to barrel for a natural fermentation and ageing on yeast lees for 10 months. The other half was pressed to tank for fermentation, then once was complete, transferred to barrel for maturation. After maturation the unified blend was cold stabilised and lightly bentonite fined prior to bottling with a single filtration.
